You are welcome to use all-purpose flour instead of bread flour though the quality of the bread will not be as spectacular. Nevertheless, that can be changed with a tablespoon of wheat gluten. The key to have stretchy dough and bread that hold their shapes is using gluten. In fact, gluten has been used by many professional bakers as a secret ingredient to bake tasty breads and rolls.
